Pumpkin Time

 As I begin to harvest the last of my garden, I ponder the things I can do with each of the last fruits. Spaghetti squash becomes spaghetti lasagna with leftovers for days. And the remainder squashes will be baked, shredded, and froze. Basil gets put into the dehydrator basket to dry naturally and saved in a small jar on the shelf. Tarragon has a few medicinal attributes when fresh, I could harvest some and put it in oil to extract the aromatic healing oil. But I've not needed to stimulate an appetite or dull a toothache in my household for a very long time, so I just use it in my cooking. I pulled up the last of the carrots and beets, both golden and red. They all made a wonderful medley of  roots roasted for dinner. Then there are the pumpkins. Big and orange, and small and green. 

I chose the bottom left pumpkin to process first.  Due to an immediate medical problem that sent me to the hospital, I had to wait a week. To not have increased pain and an unwanted surgery, I am leaning on my family to help me get through this process.  (I have a lemon sized cyst on an ovary) My 21 year old daughter brought up said pumpkin and I washed it in the sink, what a muddy mess. We cut the pumpkin in half, top to bottom. She scooped and separated the seeds from guts. We then put one half on a cooking sheet and sprinkled the inside with sea salt. We baked the pumpkin half, for about an hours, dude was thick! Temp was set at 400° F. I then had her sliced the cooled halves and peel and chop. We needed to cook them down a bit more, again this guy was thick. We used the instant pot for a 30 minute pressure and I am thinking this is my new way of cooking down a pumpkin. Then I had her smash the flesh and jar it for me. Our dog gets pumpkin in his dinner every night, so this mostly is for him. Mind you this photo of a jars is one pumpkin, ONE! Hahaha! 


I look forward to finishing the pumpkins. The orange ones will be used for dog food and future fermented drinks. The green pumpkins will be cooked with spices and canned for future pumpkin pies. Squee
